  • 7-Inch Kiritsuke Control: The 7-inch Kiritsuke knife gives more agile control than a larger chef knife, helping this Japanese chef knife handle quick prep for garlic, shallots, herbs, fish portions, boneless meat and vegetables.
  • AUS-10 Damascus Core: The AUS-10 high carbon stainless steel core is wrapped in 67-layer Damascus steel, giving this Damascus chef knife a layered blade structure with a visible Damascus pattern and refined material identity.
  • Hand-Forged Blade Build: The hand forged Damascus kitchen knife construction gives the blade a structured cutting feel for slicing, trimming and controlled push cuts, making it suitable for cooks who want a compact Japanese Kiritsuke knife for detailed prep.
  • Deep-Cryo HRC Control: The blade is quenched, tempered and deep-cryo treated, with about HRC 60±2 hardness. This heat treatment helps the Japanese Damascus knife balance hardness, toughness and a stable cutting edge.
  • Pakkawood Handle Balance: The Pakkawood handle supports steady grip control during repeated slicing, trimming and tip-guided cuts. The sandalwood box helps keep this Japanese kitchen knife organized when not in use.

Japanese AUS-10 Damascus Steel

Professional chef's knife material is made from Japanese Aichi AUS-10 high carbon damascus steel for the blade. Renowned Japanese knifemakers continually fold and forge Damascus steel fused into 2.0mm blades through a combination of hand forging and advanced technology, creating high toughness and unique grain patterns.

Kitchen cooking knives are forged with a deep cold treatment and a Rockwell hardness of 60±2 HRC; maintaining superior sharpness, edge retention, stain resistance and rust resistance. This is the masterpiece of the famous Japanese knife maker, recommended and recognized by professionals from all walks of life.

67-Layers Damascus Steel Forging Process

Combining advanced precision forging technology and traditional hand forging methods to fold and forge 67 layers of Damascus steel clad blades. The microstructure is altered by vacuum deep cooling treatment to bring out its optimal performance.
